Caramelized Onion & Black Garlic Dip

This fantastic dip is a crowd pleaser for anyone who can’t get enough garlic! Chef Britny crafted this dip to be creamy, savory, with a touch of sweetness. This spread can dress up any hors d’oeuvre or be served on its’ own; either way it’s a great addition to your next meal and can be made in 8 simple steps!

Caramelized Onion & Black Garlic Dip

Black garlic has a touch of acidity which is reminiscent of Balsamic vinegar. An aged Cabernet Sauvignon which has had a few years in bottle for the tannins to soften is a perfect pairing with the umami character of the black garlic, the slight acidity and the saltiness of this dip. We recommend the 2015 Tonella Cabernet Sauvignon from our estate vineyard in Rutherford for a simple but memorable pairing.

Ingredients

  • 1/4 cup olive oil
  • 1 tsp fresh thyme leaves
  • 6 cloves of black garlic*, chopped
  • 3 large yellow onions, thinly sliced
  • Salt and freshly ground black pepper
  • 1 cup crème fraiche
  • 1 cup cream cheese
  • 1 bunch fresh chives, chopped (about 3 tablespoons)

Instructions

  1. In a large sauté pan over medium heat, add the olive oil.
  2. Add the onions and thyme. Sauté, stirring constantly. Onions absorb oil quickly, so add more if necessary.
  3. Continue to cook until golden brown and very soft, about 15 minutes.
  4. Remove from the heat and season with salt and pepper. Let cool slightly.
  5. In a food processor, add the crème fraiche, cream cheese, black garlic, and onions.
  6. Pulse until combined and desired texture is achieved.
  7. Top with chives. We like to sprinkle with our in-house signature Cabernet Salt (available for purchase in our Tasting Room!)
  8. Serve with your favorite chip, bread, or cracker!

*Note: Black garlic is a darkly colored, heat treated garlic which can be found in larger supermarkets or gourmet food shops as well as online.
